Place all guacachurri ingredients except the avocado into a food processor, or use an immersion blender, and pulse until herbs and garlic are finely minced.
Put the blended herb mix into a bowl and add the diced avocado. Mash the mixture with a fork, leaving it chunky. Set aside.
In a sauté pan, heat the oil on medium high heat. Add mushrooms and sauté until golden brown, approximately 5 minutes. Salt to taste.
Assemble your burgers. Place a beef patty on the bottom halves of 4 buns. Next, evenly distribute the mushrooms between the 4 burgers. Do the same with the guacachurri mixture, top with other half of bun and serve.
